How do you make Portuguese rice that is served at weddings?

The one that has small clams and is reddish coloured, and is served with fried fish and breaded shrimps? I'd love to suprise my Portuguese mother- in-law by making it for her

  1. 1 Cup long-grain or Goya rice 2 Cups water Olive Oil (enough for the bottom of your pot, about 2 tablespoons) 1 Tall-sided Pot (copper-bottomed if possible) 2 tablespoons salt Ketchup (to taste/color preference) 1 Small onion Optional - Portuguese Sausage(Chorizo or Linguica or even Keilbasa) Chop up the onion in coarse pieces and clarify in the hot olive oil. If you see it not cooking off fast enough, remove the lid for a bit. ***It is usually presented on a bed of lettuce on a flat metal dish, family style, garnished with black or green Mediterranean olives. ****Make the rice several times so you can figure out what you like best. You can add more or less water or ketchup to change color and consistency. *****A really delicious addition (my personal favorite): Add Portuguese Chorizo (or Spanish chorizo) for a spicy and smoky flavor. Really, any kind of dried meat is great, try ham or pepperoni! Or in your case even clams?! One of my Aunts even adds peas and carrots for variety. ******Burnt rice tastes horrible.   3. That's not portuguese. It's SPANISH and it's caled PAELLA... So I wouldn't advise it for your PORTUGUESE mother-in-law, the portuguese don't like one bit to be mistaken for spanish...
  4. you mean "Arroz de tomate" tomato rice? Dont use ketchup! i am from Portugal. Put olive oil + picked onion on a pan and let in get color gold, then put sliced tomatos.wait for a minute so they mixed the olive oil and onion. Then put the rice on a minute on that misture. Put water a let it boil for 10 / 15 minutes. Then its done.
